Bobby Flay Grilled Ribeye Steak Recipe with Blue Cheese and Vidalia Onion Jam
Rib Eye Steak Recipe:
4 Grass Fed Rib Eye Steaks
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper
Rub each steak on both sides with some of the olive oil and seasonings. Grill over high heat, turning just once, to desired doneness.
Vidalia Onion Jam Recipe:
2 tablespoons bacon drippings
3 Vidalia onions, peeled, halved, sliced 1/4-inch thick
2 cloves garlic, finely chopped
1 jalapeno chile, finely diced
1/2 cup red wine
1/4 cup red wine vinegar
2 tablespoons creme de cassis
2 tablespoons grenadine
Honey, to taste
Salt and freshly ground black pepper
1/4 cup chopped fresh flat-leaf parsley
Heat grill to high. Heat a cast iron skillet until hot, but not smoking.
Add the bacon drippings to the cast iron skillet and heat. Add onions, garlic, jalapeno, wine, vinegar, cassis, grenadine and salt/pepper.
Cook while stirring occasionally, until the liquid mixture is thickened like a jam which will take about 20 minutes.
Taste and season with honey, salt and pepper to taste.
Stir in the parsley, transfer to a bowl and let cool to room temperature.
Blue Cheese Topping Recipe
3/4 pound wedge blue cheese at room temperature (Recommended: Cabrales blue cheese)
2 to 3 tablespoons heavy cream
Mix and put on steak right before removing from grill to let it melt.
Plate steak, let sit for 5 minutes and serve topped with vidalia onion jam and a sprig of parsley.
Grass Fed Ribeye Cooking Tips
- Bring your ribeye steak to room temperature before cooking
- Do NOT over cook. Medium rare (warm but reddish-pink center) is best. This is an internal temperature of 130-135 degrees but take your ribeye steak off the heat at 125 degrees as the temperature will continue to rise as it rests.
- Let your steak rest for at least 5 minutes after cooking
