Our grass fed lamb chops are the filet mignon of lamb. These delicious chops are great for backyard BBQ’s or an elegant, intimate dinner. Chops are 4 to a package, 1 ” thick and range in weight of 1.2 to 1.5 lb.
Columbia/Rambouillet ewes are bred with Suffolk or Hampshire bucks. Our resulting grass fed lamb chops are a mild and tender. Our gourmet lamb appeals to those who do not care for a strong “gamey” taste while still appealing to true lamb lovers.
The entire flock free ranges on grass and alfalfa from fields in North Boulder County, as well as in Monte Vista, Colorado. They are never given steroids, fed antibiotics or growth hormones. Any supplemental alfalfa is sourced from local, non-GMO farms.
Our shipping is currently handled by our processing facility and comes direct to your door via either UPS or FedEx.
We ship on Monday, Tuesday and Wednesday to allow the product to arrive in frozen condition and to avoid the chance of sitting over the weekend.
Currently we ship in Styrofoam coolers using dry ice. You can reuse these containers for picnics and when you need to keep food cool.
We will send you a shipping confirmation and tracking number the day the product ships so you will be advised to look for arrival.
We send the product with the signature waived to allow the delivery to be left at your door if you are not home.
Otherwise, it may ride around in the delivery truck for days.
Recipes / Tips
Lamb Chop Rub Recipe
- 1 tablespoon minced garlic
- 1 tablespoon fresh rosemary leaves
- 1 teaspoon fresh thyme leaves
- Pinch cayenne pepper
- Coarse sea salt
- 2 tablespoons extra-virgin olive oil
- 6 lamb chops, about 1″-inch thick
In a processor add the garlic, rosemary, thyme, cayenne, and salt. Pulse until combined. Pour in olive oil and pulse into a paste.
Rub the paste on both sides of the lamb chops and let them marinate for at least 1 hour in the refrigerator.
Remove from refrigerator for 20 minutes and allow the chops to come to room temperature.
For indoor cooking heat a grill pan over high heat until almost smoking, add the chops and sear for about 2 minutes. Flip the chops over and cook for medium-rare another 3 minutes for medium- and 3 1/2. For our outdoor grillers preheat a grill to medium -high heat.
125-130 degrees grill 3 minutes and flip for 3 minutes.
