Meatballs with Black Olives

2 lbslean grassfed ground beef
1/2 Cfinely chopped black olives
1/3 cfinely chopped onions
1 tgarlic
1/2 cfinely chopped fresh parsley
11 egg
1/3 Cbread crumbs
1/2 tsalt (optional)
1/2 tfreshly ground black pepper
2 Tgrape seed oil

Mix all ingredients in glass bowl. Form 1 1/2 – 2″ meatballs. Brown in grape seed oil over medium heat. Place meatballs in covered baking dish. Pour prepared tomato sauce over meatballs. Bake in 350 degree oven 20 minutes. Serve over pasta or wilted spinach bed.
