With a family of 8, we often are cooking for
large gatherings of 20 or more guests. When we feed large
groups, grass fed beef roasts and stews are our menu favorites.
Stews and roasts do not have to be served exactly on time so they allow us
more freedom to entertain the crowd. We can turn on a crock pot or low
oven to slow cook our meal. Dinner time can vary by an hour or
two without any problems.
Plus a little beef goes a
long way for less expense.
Another advantage of roasts is that they make excellent sandwich
meat. We don't have a lot of time to cook with all the farm duties
but we don't want to serve our family and guests processed deli
meats.
Slicing a roast in deli slices is a great quick lunch
favorite which can be made in advance.
Chili made with grass fed beef is always a hit. We just start the
chili in a crock pot and a hot meal is ready when we come in.
Plus walking into the kitchen with the smell of chili or stew cooking
gives such a warm homey feel. We can have a nutritious meal without
any work.
Our grass fed beef has about the same fat content as skinless chicken.
This lean beef can actually help to lower your family's LDL cholesterol
levels.
Even though it is low in "bad fats" it is rich in heart friendly
"Omega 3" fatty acids. Plus it contains "conjugated linoleic acid" or CLA
which has been shown to help fight cancer.
