GRASS FED BEEF RECIPES OF THE MONTH
======================================================

BRATS WITH SAVORY BEER SAUCE

2 lbs. Beef bratwurst
2 @ 12 ounce bottles or cans of beer
1 large onions
10 brat buns

Start the grill. 

If using a charcoal grill, allow the charcoal to burn until coals are covered with white-ash glowing embers (about 20-30 minutes). If you can still see a red glow, it's too early to start cooking.

On a gas grill, the heat is just right when you can hold your hand palm-down 2 inches above the grate for only 4-5 seconds. 

As you wait for the grill to get ready, put 2 beers in a pot. Throw in a chopped onion and the brats. If you need more liquid to cover the brats, add water.

Bring the beer to a simmer.  Don't let it boil - ever!  When steam begins to rise from the top of the liquid, it's just right. Boiling will cause the brats to burst.

Simmer the brats for 15 minutes. Throw out the beer/onion mixture.  When grill is ready, place brats on the grill 7-9 inches above the coals or burner.

Use tongs to turn the brats often until golden brown on all sides.  If you have pre-simmered them, grill for 10 minutes. Cover grill between turns. Do Not overcook or poke as the bratwurst will become dry.


GRILLED BEEF TENDERLOIN FILET

4 grass fed beef tenderloins 
1/4 c. olive oil
Sea salt and fresh cracked black pepper to taste

Brush the meat with oil and season both sides with salt and pepper. Grill the meat quickly 
for 2 to 3 minutes per side for rare to medium rare. Remove from grill and place in warm oven to
allow the meat rest before serving.

I was just elected to serve as the President of the American Grass Fed Association for the year 2005. The American Grassfed Association helps producers, industry affiliates, research partners, educators and those simply interested in purchasing pasture raised products.  The AGA website is at:

Many American families are forced to leave grass farms that have been held through generations because farming and ranching does not provide a sustainable income. These small farms are struggling to compete in an industry dominated by factory farms, mega-feeders and gigantic processors.

My goal as President of the AGA is to help families breathe new life in their grass farms by helping producers connect with consumers who want pasture raised goods which are nutritionally superior, more humane and better for our environment. Also, our organization is supporting a USDA 100% grass raised labelling standard for grass fed products. 

With our efforts, consumers will benefit from a superior product.  Grass farmers will be able to remain on the land they love sharing their dreams and ideals while working side by side with their families.

I am excited about being able to serve such a wonderful organization.
